Holiday Cupcakes

December 9, 2013
Happy Happy Monday!  Of course I have to mention that it’s great to be a Florida State Seminole!!!  On Saturday, I went to the ACC Champ Game against Duke here in Charlotte and had an absolute blast!  I’m so pumped to play Auburn for the National Title in Pasadena on January 6th and am super jealous of all of my friends who have their flights booked and tickets purchased.  What I would do to be at that game!!!

Anyway, back to today’s post…
A few years ago, friends were hosting a Holiday Party, and I volunteered to bring dessert since I’ve always loved to bake.  I thought it would be cute to stay in spirit and jazz up the usual Funfetti cupcakes by making them more festive.  I had never made anything like these before so was very pleased with the finished product and everyone seemed to love them.  I have a few holiday parties coming up this week and I’m debating if I want to get creative again.  If I do, I’ll be sure to show you how they come out, but I wanted to post this for inspiration!
(In addition to the cupcakes, I used licorice, pretzels, Mike & Ike’s, marshmallows, Starbursts, and other edible goodies to help make the figures.  I think it goes without saying that these are NOT healthy in the least bit.  I certainly care way more about eating clean now than I did back then).

The penguins were my favorite!  The head is a doughnut hole, the center of the body is a mini cupcake (with the top facing down), and the lower body is a regular sized cupcake.  As you can see, I used Oreos for the wings, Starbursts for the beak and feet, marshmallows for the belly and whites of the eyes, and mini chocolate chips for the pupils.  Aren’t they cute?!!

After that party, I started making cupcake figures for everything that following year: birthdays, baby showers, wedding rehearsal dinners, etc.  It has been quite a long time, but I guess we’ll find out if I still have it in me or not :).
